    Raspberry Angel Food Cake

    1 angel food cake
    1 (3-1/2-ounce) can flaked coconut, divided
    1-1/2 cups frozen raspberries with juice, defrosted
    1/2 teaspoon vanilla extract
    2 tablespoons granulated sugar
    2 cups whipping cream, whipped, divided

    Remove a 1-inch layer from top of cake. Scoop out center from cake, leaving walls and bottom about 1-inch thick. Crumble the scooped-out cake. Mix with 1/2 cup coconut, raspberries, vanilla, sugar and 1 cup whipped cream. Fill cake with fruit mixture and replace top. Chill several hours. Before serving, frost cake with
    remaining whipped cream. Sprinkle with remaining coconut.
