    Cheesy Beef Enchillada Cassarole

    List of Ingredients

    1 lb. ground beef
    1 can (10-oz.) enchilada sauce
    1 cup salsa
    6 flour tortillas (10-inch)
    2 cups fresh or canned whole kernel corn
    4 cups shredded cheddar cheese

    In skillet, brown ground beef; drain. Stir in enchilada sauce and salsa; set aside. Place two tortillas, overlapping as necessary, in the bottom of greased 13x9x2 pan or baking dish. Cover with 1/3 of the meat mixture; top w/1 cup corn; sprinkle with 1 1/3 cups cheese. Repeat layers once, then top w/remaining tortillas, meat and cheese. Bake, uncovered, at 350 degrees for 30 min.
