    Rhubarb Coffee Cake

    l l/2 Cups Sugar
    3 1/4 Cups Flour
    2/3 Cups Butter
    4 tsp BPowder
    3 Eggs
    l tsp each of salt, nutmeg, baking soda
    2 Cups Rhubarb

    Cream sugar and butter; add eggs and rhubarb; sift and mix all dry ingredients; add all together. Bake in 350 oven for 45-50 mins. Batter should be stiff/somewhat dry; if not, add some flour; A "liquidy" batter will result in a heavy/flat cake. When done, rub some butter over top for a glaze; serve plain or with strawberry jam.
