    Hot Lemon Souffle

    List of Ingredients

    2 tbsp. butter
    6 tbsp. flour
    1 c. milk
    grated peel and juice from 1 large lemon
    4 eggs, separated
    c. sugar powdered sugar

    Preheat oven to 350. Grease a 5 c. souffle dish. Melt butter, add flour and cook, stir, for 2 minutes. Gradually stir in milk and beat until smooth. Cook, stir, 2 more minutes. Beat lemon peel and juice into mixture. Beat in egg yolks one at a time. Beat in granulated sugar and mix well.

    Beat egg whites in a separate bowl until stiff, but not dry. Gently fold egg whip into lemon mixture into souffle dish and bake 45 minutes or until well puffed and lightly browned. Sift powdered sugar over the top and serve immediately.
