    Rhubarb Sauce

    2 T. unsalted butter
    4 c. rhubarb sliced
    1/2 c. sugar

    In large skillet, melt butter over high heat. Stir in rhubarb and sugar and continue to cook,
    stirring constantly, until tender, 5 to 10 minutes. Serve warm. Very good to eat over ice cream. Also, if you put some of this on the bottom of a 9x13" pan, and pour a white cake mix (prepared to directions on the back of box) over it and bake as directed to the box directions... then turn it upside down once out of the oven, like you do a pineapple upside down cake, it is wonderful!!!!!!!
