Beer Battered Fish

List of Ingredients
1 1/2 pounds of fish fillets
2 eggs, separated
1/2 cup of beer
1/4 cup of milk
1 cup of flour
1/2 teaspoon of seasoned salt
1/4 teaspoon of pepper
Partially defrost the fillets, if frozen fish is used.
Cut in pieces 3-inches x 1 1/2-inches.
Place on paper towels to dry.
Beat the egg yolks until thick and light.
Blend in the beer, milk, flour and seasonings.
Mix until smooth.
Beat the egg whites stiff, but not dry and fold in the batter.
Pat the fillets dry.
Dip into the batter, lift out and drain slightly with a fork
or a slotted spoon.
Fry in deep fat heated to 375 degrees F. for 2 to 3 minutes
or until golden brown and puffed.
Drain on paper towels.
