    2 cups crumbled corn bread
    1 (10 oz.) can enchilada sauce, divided
    1/2 teaspoon salt
    1/2 lb. ground beef
    1 (8 oz.) can tomato sauce
    1/2 cup shredded Mexican blend cheese

    Recipe



    Combine corn bread, 1/2 the enchilada sauce and salt. Crumble meat over
    mixture and mix well. Shape into 1" balls.Place in a greased 10 x 15"
    baking pan. Bake,uncovered, at 350 for 18-22 mins, or till meat is no
    longer pink. Meanwhile heat tomato sauce and remaining enchilada
    sauce.Drain meatballs, place in a serving dish.Top with sauce and
    sprinkle with cheese. Serve with toothpicks.about 4-1/2 dozen.
