    Recipe Introduction

    I love biscotti and took a recipe and redesigned it to includes white chocolate and dried cranberries.

    List of Ingredients

    2 cups flour
    1/2 cup walnuts, finely chopped
    1 tsp. baking powder
    1/4 tsp. salt
    3/4 cup sugar
    2 eggs plus 1 egg white
    1/4 c. vegetable or canola oil
    1 tbl. orange juice
    2 tsp. grated orange peel
    1-1/2 tsp. vanilla extract
    1/2 c. dried cranberries, chopped
    1/2 c. white chocolate chips, chopped (if you can find the mini chips you don't need to chop.


    Preheat the oven to 350
    Combine the flour, walnuts, baking powder and salt then set aside. In a large mixing bowl combine the sugar and two whole eggs. Beat with an electric mixer at medium speed 2 to 3 minutes, or until it is thick and pale yellow in color. Add the oil, orange juice, orange peel and vanilla; beat for 1 to 2 minutes, or until well mixed. Gradually add the flour mixture and mix until well blended. Stir in the cranberries and white chocolate by hand. Turn dough onto a lightly floured surface (dough will be soft and sticky). Sprinkle with additional flour; knead flour into dough. With floured hands, shape into two (8 x 2-inch) logs. Place 3 to 4 inches apart on a greased baking sheet; flatten tops slightly. Combine remaining egg white with about 1 tbls. water; brush on logs, then sprinkle with sugar. Bake for 25 to 30 minutes, or until lightly browned. Let cool on baking sheet for 15 minutes. Reduce oven temperature to 300. Using a serrated knife, cut logs diagonally into 1/2-inch slices then arrange slices, cut-side down, on the baking sheet. Bake for 8 to 10 minutes; turn slices and bake for another 8 to 10 minutes, or until golden brown. Remove to wire rack; let cool completely. Store loosely covered at room temperature. Makes about 2-1/2 dozen.
