    List of Ingredients

    1/2 cup shortening
    1 1/2 cups white sugar
    1 egg
    1 cup canned pumpkin
    1 teaspoon vanilla extract
    2 1/2 cups all-purpose flour
    1 teaspoon baking powder
    1 teaspoon baking soda
    1 teaspoon salt
    1 teaspoon ground nutmeg
    1 teaspoon ground cinnamon
    1/2 teaspoon pumpkin pie spice
    1/2 cup chopped walnuts -- optional
    1 cup semisweet chocolate chips (optional)
    1 cup white chocolate chips
    1 cup Craisins (dried cranberries)


    Preheat oven to 350 degrees F. Grease cookie sheets (easier to get cookies off the pan if you use parchment paper, rather than greasing the cookie sheet). Cream shortening and sugar in bowl until light and fluffy. Add egg,
    pumpkin and vanilla. Mix well. Add mixture of flour, baking powder, baking soda, salt and spices; mix well. Stir in walnuts and chocolate chips. Drop by teaspoonfuls onto greased cookie sheet. Bake for 15 minutes or until
    light brown. Cool on wire rack.
