Mocha Silk Pie

Because the filling is uncooked, you need to use an egg product rather than raw eggs.
List of Ingredients
3/4 c. butter (NOT MARGARINE)
1 1/4 c. sugar
3 1/2 tsp. instant coffee crystals
1 1/2 tsp. vanilla
3 oz. unsweetened chocolate, melted and cooled
3/4 c. refrigerated or frozen egg product, thawed
1 baked 9-inch pie shell
1/2 Tbls. sugar
Beat butter and 1 1/4 c. sugar with an electric mixer until fluffy, about 4 min.
Dissolve 2 tsp. coffe crystals in vanilla.
Add to butter mixture with chocolate.
Add egg product gradually; beat on high speed. Scrape bowl constantly. Spoon into pie shell.
Chill, covered for 5-24 hours. Combine cream, sugar and remaining coffee crystals. Beat until soft peaks form. Spoon on pie. Garnish with shaved chocolate, if desired. Serves 8
