    Nacho Casserole

    List of Ingredients




    3 lbs. ground beef
    1 c. chopped onion (more if desired)
    2 cloves crushed garlic
    1 c. sour cream
    1 (8 oz) can tomato sauce
    1 (7 oz) can chopped green chilies
    1 (6 oz) can tomato paste
    1 (4-5oz) can chopped ripe olives, drained
    1 (8 oz) pkg. tortilla chips, coarsely crumbled
    12 oz. shredded Monterey Jack cheese
    paprika (optional)

    Recipe



    In large heavy skillet saut� sausage. Drain grease.
    Add onions, garlic and saut�.
    Reduce heat.
    Stir in sour cream, tomato sauce, green chilies, tomato paste and olives.
    Heat through, but don�t boil.
    In greased 3 qt. baking dish layer 2/3 of tortilla chips, all of meat mix, remaining chips and cheese. Sprinkle top with paprika if desired.
    I make this ahead and freeze it. To serve, place frozen into 350� oven. Bake uncovered for about 1� hours or until thoroughly heated and cooked through.
    Serves about 10.

    *This recipe is easily double or tripled for potlucks and socials or even future home meals..
