    German Potato Salad

    List of Ingredients

    20 lbs. RED* potatoes, scrubbed and boiled with the skins on (unless you like peeling potatoes)
    4 - #10 cans sliced potatoes - drained (gallon cans) **
    2 cups chopped onion
    1/2 c. parsley flakes
    2# bacon, chopped and fried crisp
    3 TBl salt
    season salt
    1 cup flour
    4 cups sugar
    3 cups vinegar
    2 cups water


    If using whole potatoes,slice/cube into bite size pieces.

    Combine salts, flour, sugar, vinegar and water and bring to a boil stirring frequently. Allow to cook until it starts to thicken.
    Pour over the combined potatoes, onion parsley flakes and bacon. Stir gently to coat all ingredients and serve warm.

    *Potatoes have different textures. 'Red' Potatoes are my favorites for potato salad because of their smooth, creamy texture.
    If you opt to use something else, please try to avoid 'Russets'. 'Russets" are wonderful for baking and French Fries, but not for potato salad.

    **The canned potatoes may need to be purchased at a resturant supply store.
