    Chocolate Eclair Cake

    1 package graham crackers
    1 sm. pkg. instant French Vanilla pudding mix
    3 c. milk
    1 container (8oz) Cool whip
    1 c. sugar
    1/3 c. cocoa
    1/4 c. butter
    1/8 tsp. sallt
    1/4 c. milk
    1 tsp. vanilla extract


    1-Butter a 13 x 9 inch pan; cover bottom with 1 layer of whole graham crackers.
    2-Mix pudding mix and the 3 cups milk, beating well. Fold in Whipped Topping.
    3-Spread half of mixture over crackers in pan. Cover with another layer of crackers. Spread remaining mix over crackers and top with layer of crackers.
    4-In small sauce pan combine sugar, salt, cocoa and the 1/4 cup milk. Bring to boil; boil 1 minute. Remove from heat; add butter and vanilla. Beat until smooth and spread on top of crackers. Refrigerate.
    Variation: If you prefer, make a powdered sugar frosting (chocolate) and use in place of the cooked icing. OR Use canned frosting.
    Better if made a day ahead!
