Tomato and Cheese Quesadillas
This recipe is for one quesadilla which will be cut into four pieces. Simply increase quantities to reflect the amount of appetizers you would like to make.
List of Ingredients
1 flour tortilla
1-1/2 tablespoons salsa
1/3 cup grated cheddar or monterey jack cheese
1/2 tbsp. finely chopped green onion
1 tsp. chopped fresh parsley or cilantro
vegetable oil for frying
Spread each tortilla with salsa. Sprinkle with cheese, green onion and parsley or cilantro. Fold tortilla in half, gently pressing edges to seal.
Heat a small amount of oil in a non-stick frying pan. Add quesadilla and cook until lightly browned. Turn over and repeat with other side. Cut quesadilla into four wedges and serve immediately with sour cream for dipping.
