    This is a relatively inexpensive dish that your family will love.

    List of Ingredients




    1 whole chicken, cut up into pieces
    1 whole onion, chopped
    2 cloves garlic, crushed
    1 sm. can tomato paste
    1 c. cooking oil
    3/4-1 c. flour
    salt & pepper

    Recipe



    Place 1/2 c. oil in a large heavy Dutch oven. Salt and pepper the chicken and place it in the pot. Cook over medium heat until chicken is brown on all sides. Saute chopped onions and garlic then add to chicken. Drain off the oil and place it with the remaining 1/2 c. oil into a heavy skillet. Add 3/4-1 c. flour and brown off to make a dark roux. Add tomato paste to your roux. Stir well. (Adding the tomato paste will give the roux will give the sauce a good flavor.) Add about 2 cups or more water to the roux to make your sauce. Pour the sauce over chicken and onions in the large pot. Add more water to thin your gravy to the consistancy of you want your sauce to be. You may need to add more salt and pepper. Cook chicken the the sauce over medium to low heat, stirring occasionally for 30-45 minutes. Serve over hot cooked spaghetti.
