1 recipe of Cajun Seasoning (see: SpiceHerbMixes)
4 center cut pork chops, about 1/2 inch thick
2 tsp. butter
Coat chops well on both sides with the seasoning mix. Heat butter over high heat just until it starts to turn brown. Place the chops in the pan and reduce heat to medium. Fry on both sides until dark brown, about 6-8 minutes.
Note: You may wish to place the chops in the refrigerator for about 30 minutes prior to cooking to allow the flavors to penetrate more deeply.
