Picnic Pasta with Chicken

List of Ingredients
2 whole chicken breasts on the bone
2 cups. chicken broth
16 oz. package medium pasta shells
1 bunch broccoli, cut into bite sized pieces
1/2 c. red onion, chopped
1 1/2 c. low fat mayonnaise
1/4 c. low fat sour cream
1/4 c. dijon mustard
1 1/2 Tbls. white wine vinegar
1 1/2 Tbls. sugar
1/2 tsp. dried tarragon
1/4 tsp. salt
1/2 tsp. pepper
Place chicken in pan with broth and 4 c. water. Bring to a boil, reduce the heat to simmer. Cook, turning once for 20 minutes or until done. When cool enought to handle. Skin and debone. Tear into small pieces.
Cook pasta shells, adding broccoli for the last 7 minutes. Drain and rinse under cold water. Drain well.
Add chicken and onion.
Combine and mix remaining ingredients. Fold into salad. Cover and refrigerate until thoroughly cooled.
Note: I like to hold out a bit of the broccoli and add it to the top as a garnish.
