3 - 4 Bean Salad

An old fashioned salad filled with flavor, fiber and a good source of protein too.
List of Ingredients
3-4 cans various beans(green, navy, kidney and rinsed black beans or garbanzo make a tasty combination)
¾ c sugar (I use Splenda granulated)
2/3 c vinegar (I like rice wine or white wine vinegar)
1/3 c canola or extra virgin olive oil
Optional mix and match additions (I personally like to add all of them:
½ c chopped onion
1/3 c finely chopped celery
2 T finely chopped roasted red pepper (from a jar)
Dash of black pepper
1-Open cans and pour beans in a colander to drain while you prepare other items.
2-Combine vinegar and oil and mix well, adding black pepper if desired.
3-Chop any of the optional vegetables and add to dressing.
4-Place beans in a dish that can be covered; pour dressing mixture over the top. Mix gently, cover and place in refrigerator for a few hours.
Note: I like to make this a day or two ahead so the flavors fully blend.
