    Cheddar Chowder with Ham

    A hearty and filling meal all alone, or add a salad to round out your vegetable intake.

    List of Ingredients

    • 2 c. chicken stock *
    • 2 c. diced potatoes
    • 1/2 c. diced carrots
    • 1/2 c. diced celery
    • 1/4 c. chopped onion
    • 1 t. salt
    • 1/4 t. pepper
    • 1/4 c. butter
    • 1/4 c. flour
    • 2 c. milk
    • 2 c. grated cheddar cheese
    • 1/4 c. cubed ham


    1. Combine first seven ingredients in a large kettle. Boil 10-12 minutes. DO NOT DRAIN.
    2. Meanwhile, in a small saucepan, melt the butter and add the flour. Stir until smooth (about 1 minute). Slowly add milk while stirring. Continue heating; stirring constantly until thickened. Add grated cheese and stir until cheese is melted and fully incorportated with the white sauce.
    3. Add sauce mix and cubed ham to the vegetables which have not been drained. Heat thoroughly and serve.

    Final Comments

    6 servings.
    *Note:You may wish to substitute beer for half of the chicken stock.
