    Mom's Beef Stew

    The secret to this recipe is to brown (almost blacken) the beef cubes in hot oil after they've been floured.

    List of Ingredients

    Beef cubes about 1 inch square
    seasoning salt, pepper, garlic powder (optional)
    oil (for browning off the beef)

    stock or water
    potatoes - cut into large chunks
    carrots - cut into large chunks
    onions - cut into large chunks
    celery - cut into large chunks
    Other vegetables of your choice (optional)


    Preheat a heavy pan (with about 1/2 inch of oil) for browning to med high.
    Combine seasonings and flour. Mix well.
    Lightly moisten beef cubes and dredge in the flour mixture. Place floured cubes in preheated pan. Allow them to cook without disturbing until very dark brown on one side, turn and repeat.
    Add vegetables and liquid to heated pan. Bring to a boil and allow to cook meat is cooked through and veggies are tender. The very brown meat gives this dish is flavor and thickness.
    Great with biscuits!!
