Chicken Chow Mein Casserole
List of Ingredients
1 lb chicken breast, cut into strips
3/4 cup celery, chopped
3/4 cup onions, chopped
1 1/4 cups boiling water
1/2 cup rice, uncooked
1/2 teaspoon salt
1 can chicken and rice soup
4 ounces mushrooms
1 tablespoon brown sugar
2 teaspoons soy sauce
1 teaspoon butter or margarine
1 1/2 cups chow mein noodles
Recipe
In small amount of olive oil, cook and stir chicken, celery and onion until chicken is tender and almost completely cooked.
Place rice in 2 quart casserole. Pour water on and add salt.
Stir in chicken, soup, mushrooms, sugar, soy sauce and margarine together.
Cover and cook in 350� oven for 30 minutes. Stir and cook uncovered for 30 min longer.
Stir in noodles, serve immediately.
Note: Water chestnuts or bamboo shoots may be added if desired.
