Crust:
1 cup Jiffy Baking Mix
1/4 cup soft butter
1/4 cup powdered sugar
Filling:
2 tablespoons Jiffy Baking Mix
2 eggs Beaten
1 cup sugar
3 tablespoons lemon juice
1/4 teaspoon lemon rind
1 tablespoon powdered sugar
Recipe
Preheat oven to 350�.
Mix crust ingredients together until crumbly. Press into bottom of an ungreased 9x9� pan. Bake for 20 minutes.With electric mixer, beat eggs on high until foamy. Add sugar, baking mix, lemon juice and rind. With electric mixer, beat 1 minute.
Remove baked crust from oven and pour lemon mixture over crust. Bake for about 25 minutes. Remove from oven, cool, dust with powdered sugar and cut in bars.
