    Low Calorie Blueberry Muffins

    List of Ingredients

    1 1/2 cups flour
    1/4 cup sugar
    2 teaspoons baking powder
    1/4 teaspoon salt
    1 egg
    1/2 cup skim milk
    1 1/4 cups blueberries
    2 tablespoons light margarine
    1/4 teaspoon grated lemon rind

    Recipe

    Preheat oven to 375�.

    Combine dry ingredients in large bowl, set aside. Beat egg slightly, whisk in milk and margarine. Take 1/4 cup of blueberries, mash them up, and whisk into egg mixture. Pour this over dry ingredients. Add berries and lemon peel; mix until ingredients are just moistened. Place in 12 paper lined muffin cups.

    Bake in 375� oven 15 to 20 minutes, or until lightly browned. Let cool 5 minutes before removing from pan.
