    3 Bean Pasta Salad

    8 ounces uncooked pasta
    3 tablespoons chopped fresh parsley
    8 ounce can red kidney beans -- drained and rinsed
    8 ounce can chickpeas -- drained and rinsed
    1/2 cup green beans
    1 small red onion -- chopped
    1/2 cup chopped red bell pepper
    3 tablespoons Dijon mustard
    2 tablespoons Canola oil
    3 tablespoons red wine vinegar

    Recipe



    Cook the pasta, rinse with cool water and drain. Place the pasta in a large bowl and add the parsley, kidney beans, chick peas, green beans, onion and bell pepper.

    In a small bowl stir together the remaining ingredients. Toss the pasta with the dressing.

    Serves: 8
