    1/2 pound cooked Italian sausage, sliced
    2 3/4 cups chicken broth -- lite & fat-free
    1/4 cup evaporated skim milk or fat-free half and half
    1 medium potato
    2 cups chopped kale
    1/4 teaspoon salt
    1/4 teaspoon crushed red pepper

    Brown sausage and slice thinly. Combine with broth and cream in saucepan on medium heat. Slice unpeeled potato 1/4" thick, then quarter and add to soup. Add the kale and spices and simmer 1 hour, stirring occasionally.
