    Green Chile Chicken Casserole

    2 tablespoons butter
    1 medium onion -- diced
    1/2 pound fresh mushrooms -- sliced
    1 tablespoon flour
    1 cup chicken broth
    16 ounces sour cream
    1 cup chopped green chiles* -- (1 - 2 cups)
    1 package 6-inch corn tortillas, quartered -- (9 1/2 ounce pkg.)
    3 cups shredded, cooked chicken
    8 ounces monterey jack cheese -- grated

    Saute onion and mushrooms in butter until limp, about 5 minutes. Blend in flour, then chicken broth. Cook and stir until thickened. Remove from heat and stir in sour cream and chiles. *Katie's note: I add some chopped chipotles in adobo sauce.

    In a greased 2-quart casserole, layer tortillas, chicken, sauce, and cheese. Repeat layers, ending with cheese. Bake at 350F for 35-40 minutes.
