    Pork Medallions with Dijon Cream Sauce

    2 pork tenderloins
    herbes de Provence
    1/4 cup onion -- finely chopped
    1/2 cup wine -- I used white zinfandel
    1/2 cup cream
    2 teaspoons dijon mustard
    freshly ground pepper

    Slice the tenderloins 1/2" thick and flatten to 1//4". Sprinkle with herbes de Provence and fry in a lightly oiled skillet. Remove from pan and keep warm.

    Saute the onions until they begin to brown. Stir in wine and simmer until reduced to 1/4. Stir in cream and simmer about 5 minutes until thickened. Pour over medallions.

    Note: This would be good with tarragon instead of the herbes de Provence.
