    Nectarine Rum Jam

    4 cups chopped peeled ripe nectarines -- or peaches, or apricots
    1 package powdered pectin
    5 cups sugar
    1/4 cup rum, liqueur, brandy -- or 2 tsp. vanilla

    Combine fruit and pectin in kettle and heat to boiling over high heat, stirring constantly.

    Add sugar. Cook and stir until dissolved.

    Heat to full rolling boil and boil hard for one minute, stirring constantly.

    Remove from heat. Stir and skim foam for 5 minutes to prevent floating fruit. Stir in rum.

    Ladle into hot jars, leaving 1/4" headspace. Wipe rims, adjust lids and process in a boiling water bath for 10 minutes.
