    Ginger Peach Chutney

    3 1/2 pounds peaches, peeled and diced -- (about 7 large)
    1 large onion -- finely chopped
    1 yellow pepper -- diced
    2 hot red pepper -- diced
    1/2 cup crystallized ginger -- chopped
    2 cups cider vinegar
    3 cups sugar
    1 tablespoon powdered ginger
    1 teaspoon cinnamon
    1/4 teaspoon ground cloves
    1/4 teaspoon mace

    Combine ingredients and simmer until thickened. Be careful not to scorch.

    Ladle into hot jars, leaving 1/4" head space. Wipe jar rim clean. Place lid on jar. Tighten screw band finger tight.

    Process in boiling water bath 10 minutes at altitudes of 0-1000 ft., 15 minutes at 1001-6000 ft., 20 minutes above 6000 ft.


    Yield:
    "8 half pints"

    NOTES : We like it spicy...I added the tablespoon of ginger powder and an extra hot pepper.
