Spinach Salad with Orange and Avocado

torn spinach leaves
mandarin oranges -- drained
avocado -- cubed
red onion -- thinly sliced
orange muscat champagne vinegar -- or rice vinegar with a spoonful of undiluted orange juice concentrate
olive oil
Line plate with spinach leaves. Arrange drained mandarin orange slices on spinach. Top with cubed avocado and sliced red onion. Drizzle with dressing.
Dressing: Four parts orange champagne vinegar to one part olive oil.
