Chicken Supreme Casserole
1 cup uncooked instant rice
1 carrot scraped and shredded
1 stalk celery, finely chopped
1 Tbs. minced fresh parsley
1 (15 ounce) can cut asparagus, undrained
6 chicken breasts halves, skinned and boned
1 Tbs. soy sauce
1/8 tsp. salt
1/8 tsp. pepper
1 (10� ounce) can cream of celery soup, undiluted
1 cup water
1 cup herb -seasoned stuffing mix.
Layer first five ingredients in a lightly greased 12x8x2 in. baking dish.
Arrange chicken on top; sprinkle with soy sauce ,salt and pepper. Cover and bake at 350� for 45 minutes.
Combine celery soup and water, mixing well. Uncover chicken, and pour soup over top. Sprinkle with stuffing mix. Bake uncovered, 15 minutes or until lightly browned.
