List of Ingredients
- 2 (14 oz) cans chicken broth
- 1/2 C water
- 2 lbs. boneless chicken breast cut into bite-sized chunks
- 1 lb orzo
- 8 oz frozen peas, thawed
- 3/4 C plus 1/4 C freshly grated Asiago cheese
- 1/2 t salt
- 1/4 t fresh oregano, minced
- 1/8 t cracked black pepper
Instructions
- Bring the broth nd water to a boil in a heavy pot over high heat. Add chicken and orzo. Reduce heat to medium low and simmer until most of the liquid is gone.
- Add peas, 3/4 C cheese, salt, oregano and pepper. Mix well and cook for 5 more minutes or until heated through.
- Sprinkle with the remaining cheese before serving.

Makes 4 servings.
