Evergreen Avocado Dip

A different avocado dip - creamy and smooth. This was very popular with my family.

List of Ingredients

2 Haas avocados, mashed
2 shallots, minced
1 8-oz. pkg. cream cheese, softened
� c. minced parsley
� t. cayenne pepper
2 T. fresh lemon juice
Salt & pepper, to taste
� c. chopped pistachio nuts
Minced parsley (1 T. or less)



Recipe

Combine first 7 ingredients in a medium sized bowl. Cover tightly and refrigerate at least eight hours.

Combine nuts and 1 T. parsley and top avocado mixture. Serve immediately.
