    Jessica has made this for a few different gatherings, but she really perfected it Memorial Day 2021. Absolutely delicious as a side dish, but could easily be a dessert, too.

    She says that you shouldn't crush your crackers too fine or too evenly - you want some variation.

    List of Ingredients




    2 (20-oz.) cans pineapple chunks in juice, drained (reserve 6 Tbsp. juice)
    1 1/3 cups sugar
    5 tablespoons flour
    1 cup shredded Cheddar cheese
    1/2 t. kosher salt
    1/2 cup butter, melted
    2 sleeves Ritz crackers, crushed
    1 � 2 T. sugar

    Recipe



    Heat oven to 350F. Mix the 1 1/3 c. sugar, the flour, the reserved pineapple juice, and the salt in a medium bowl. Add the pineapple chunks and cheese to the sugar mixture and mix until everything is incorporated. Place in a greased 9x9-inch or 8x10-inch pan.

    Mix together the Ritz crackers, melted butter, and 1-2 T. sugar until crumbly and place evenly on top of the pineapple mixture.

    Bake for 30 minutes, until it is bubbly.

    Serves 8.
