Recipe Introduction
We had this at Lauri�s on Mother�s Day 2019. A really refreshing and light dessert. Some of us tasted it with a shot of vodka or coconut rum and that was popular. Most granita recipes instruct you to stir every 30 minutes after the initial hour, but Lauri didn�t do that and her texture was perfect.
List of Ingredients
1 cup water
1/2 cup sugar
Zest from 1 lemon
1/2 cup lemon juice
3/4 cup lemon/lime seltzer
Recipe
Put the water, 1/2 cup of sugar and lemon zest in a small saucepan and bring to a boil. Reduce heat and simmer for 5 minutes. Remove from heat and cool completely.
Mix together the syrup, lemon juice, and seltzer. Pour into a bowl or shallow pan. Freeze for one hour. Stir to mix well and then freeze for another 3 hours. Set out 15 minutes before serving.
Makes about 3 cups.
