    Gerry�s Chicken Pineapple Macaroni Salad

    Recipe Introduction

    I call this Gerry�s because it is as close as I�ve ever been able to come to the pasta salad that my mom�s dear friend, Gerry, used to make. It has always been one of my favorite dishes and I even had the actual recipe once. Unfortunately I lost track of it and didn�t ask Gerry for it before she passed away. But reading the original recipe at Taste of Home made me think of Gerry�s and I made some changes and really like this a lot. The original recipe had corn (???) and green peppers in it. I removed those and added pineapple and a little sour cream.

    List of Ingredients

    2/3 cup uncooked elbow macaroni
    1 cup cubed cooked chicken
    1/4 cup sliced celery
    1 hard-cooked egg, chopped
    2 tablespoon chopped onion
    1/2 cup mayonnaise
    1/4 cup sour cream
    2 teaspoons white vinegar
    1/4 teaspoon salt
    1/8 teaspoon pepper
    Small can pineapple slices, cut into �Tidbit� size

    Recipe

    Cook macaroni, drain and rinse in cold water to cool.

    In a bowl, mix the macaroni, chicken, celery, egg, onion and pineapple. In a small bowl, mix the mayonnaise, sour cream, vinegar, salt and pepper. Pour over macaroni mixture and toss well to combine. Cover and refrigerate.

    Serves 2-4.
