    Bo Lau Gai-(pineapple chicken)

    Recipe Introduction

    Beef or pork may be substituted for the chicken. Cook the vegetables crisp.

    List of Ingredients

    1 tsp salt
    1/2 tsp sherry
    1 T sugar
    1 tsp soy sauce
    2 tsp cold water
    1 T cornstarch
    4 T pineapple juice
    1 C celery, sliced at an angle
    1/2 C onion, sliced in long strips
    4 T peanut oil
    4 slices pineapple, cut in wedges
    1 pound chicken, cut in 1 inch cubes

    Recipe

    Combine the cornstarch, salt, water, and soy sauce. Marinate the chicken in it for 1/2 hour.
    Saute onion and celery in oil for 2 minutes. Saute chicken until brown.
    Mix remaining ingredients with the pineapple and add to the chicken in pan, stir, simmer until heated through. Serve with rice.
