Hand formed, Corn Meal Cookies

List of Ingredients



• 1 C shortening
  
• 1 1/2 C sugar
  
• 3 eggs
  
• 1 tsp lemon extract
  
• 1 tsp vanilla
  
• 3 C flour
  
• 1 1/2 tsp baking powder
  
• 1 tsp nutmeg
  
• 1/2 tsp salt
  
• 1 C raisins or choclate chips
  
• 3/4 C cornmeal
  






Instructions



1. Cream shortening, sugar and eggs. Add flavorings. Combine dry ingredients and add. Add raisins.
   
   
2. Roll into small balls and flatten with a fork or sugar dipped glass.
   
   
3. Bake on ungreased cookie sheet at 400 degrees F. for 10 minutes
