Shortbread with Rice Flour, Scotch

1 pound unsalted butter
4 C flour
1 C sweet rice flour
1 C powdered sugar

Mix all ingredients. Roll and pat to about 1/4 inch thick. Cut with small cookie cutters. Bake at 150 degrees F. for about 1 hour or until light brown.
