Ice box, Toasted Pecan Snowballs

• 1 C finely choped pecans
  
• 1 C butter, room temperature
  
• 2 C confectioners sugar
  
• 2 tsp vanilla extract
  
• 1/4 tsp almond extract
  
• 2 C + 2 T flour
  
• 1/2 tsp salt
  






Instructions



1. Preheat oven to 325 degrees F. Spread pecans over ungreased baking sheet. Bake until lightly browned, 3 minutes. cool
   
   
2. At medium high speed beat butter until smooth. Reduce speed to low. Beat in 1 1/4 cups sugar. beat in extracts. Beat in flour and salt and stir in pecans.
   
   
3. Shape dough into a disk. Wrap in plastic wrap. chill until just beginning to firm, 1 hour.
   
   
4. Coat baking sheet with cooking spray. Roll tablespoons of dough into balls. Place 2 inches apart. Bake 20 minutes or until edges are lightly browned. Cool 1 minute. Transfer to rack and cool 4 minutes. In bowl, roll warm cookies in remaining sugar and cool completely on racks.
