1 1/2 pounds pitted frozen cherries, thawed
1/4 C sugar,+ 1-2 T (divided)
pinch powdered star anise
pinch cinnamon
1 cup heavy whipping cream
1/2 C sour cream
Recipe
Place cherries, � cup sugar, star anise and cinnamon into a food processor and puree until smooth. Chill puree in the refrigerator for about 20 minutes
Using a whisk attachment on your electric mixer, whip heavy cream until soft peaks form. Add in the 1 - 2 tablespoons of sugar and continue to whisk just until soft peaks form. then fold in the sour cream until fluffy.
Using a rubber spatula, gently fold the cherry puree into the whipped cream. Don�t over combine the puree, it�s best to allow some red streaks to remain
Pour the Cherry Fool into four decorative glasses . Cover each glass with aluminum foil and refrigerate for up to 4 hours
