    oven at 325 Degrees F.
    Place barley, 1 cup barley to 2 cups water, in an oven proof dish. Pour boiling water over it. Season with salt if desired. Bake for about 2 1/2 hours, or until completely soft and water is absorbed.
    For sweet barley, at about half done, add 4 tablespoons sugar, or a pour of honey, with grated lemon peel. Serve with cream. Stewed raisins if desired.
