    Polenta, Chicken

    List of Ingredients


    • 1 pound chicken, cut in cubes
    • 2 T oil
    • 2/3 C diced ham
    • 1/2 small fennel bulb
    • 1/2 C chicken broth
    • 1/2 C dry sherry
    • 2 cloves garlic, minced
    • 2 tsp orange zest


    Instructions


    1. Saute chicken and remove from pan, add the two thirds cup ham and fennel to pan, saute briefly. Add broth, sherry, garlic and orange zest. Return chicken to the pan and cook 4 minutes.

    2. Serve with polenta.
