    Quinoa with Almonds and Cranberries

    List of Ingredients




    1 C quinoa
    1/2 C sliced, blanched almonds
    1 1/2 C boiling water
    1/2 tsp salt
    1 cinnamon stick
    1 bay leaf
    1/2 c dried cranberries

    Recipe



    Over medium heat, stir and toast the almonds until golden brown. Add quinoa and toast a few more minutes, until quinoa begins to darken.
    Transfer to a 2 quart saucepan and add rest of ingredients. Bring to a boil, covered. Reduce heat to a simmer for 15-20 minutes. remove from heat and let sit for 5 minutes. Fluff with a fork.
