    Quinoa, Spiced

    List of Ingredients

    2 T olive oil
    1 tsp ginger
    1 tsp ground cumin
    1 tsp ground coriander
    1 tsp ground turmeric
    1 C quinoa
    1/4 C minced Italian flat leaf parsley
    1/4 C minced fresh mint or tarragon

    Recipe

    Saute spices in the oil for a few minutes until aromatic. Add quinoa and stir well.
    Add 2 cups boiling water, cover and simmer on low heat for 20 minutes or until water is absorbed.
    Remove from heat and let stand a few minutes. Add parsley and mint. Fluff with a fork.

    Var; Use cilantro in place of mint if desired. Add 1/4 cup finely sliced scallion.
