    Beetroot cakes

    Mince or mash finely, one large cooked beet. Soak a cupful of breadcrumbs in a cupful of milk, add the beetroot and 2 eggs. Season with salt and pepper and shape into small flat cakes and roll in more crumbs. fry until golden and serve with potatoes and some green vegetable.
