    Cream of salsify soup

    List of Ingredients


    • 3 C sliced salsify soup
    • 3 C water
    • 1 tsp chopped onion
    • 1 C soy milk
    • salt to taste
    • 1 T flour


    Instructions


    1. Wash, trim,scrape and very thinly slice salsify, drop into acidic water (1 tsp vinegar to a quart of water)
    2. Put the water in a kettle and add, salsify, onion and salt. Boil until tender.
    3. Mash or puree. Strain through a medium strainer. add back to pan. Stir 1 tablespoon of flour into the soy milk and add to the soup. Reheat to thicken. Season and serve.
