    Pressing tofu to squeeze out moisture is an important first step in preparation, because it gives it a firmer texture and helps improve browning. But it can take time to do it right. America's Test Kitchen offers a time-saving trick: Drain the tofu and cut it into the desired size, then place the tofu pieces on a coffee filter set on a plate and microwave on medium power for 4 to 6 minutes, or until the coffee filter is damp. Then cook the tofu as desired.
