Olive Oil for sauteing
4 Tbsp. onion, chopped
4 Tbsp. carrot, chopped
4 Tbsp. celery, chopped
2 Tbsp. oregano
2 Tbsp. basil
1 cup carrots, sliced
2 boxes frozen spinach
3 cups frozen tortellini
8 cups chicken broth
Parmesan cheese
Recipe
Heat oil. Saut� onion, carrot and celery. Stir in spices. Add chicken broth and sliced carrots and heat to boiling. Add spinach and simmer for 10-15 minutes. Add tortellini. Cook on a slow boil for 10 minutes, then reduce heat. Add chicken broth as needed. Sprinkle with Parmesan to serve.
