    Recipe Introduction

    This is a variation of my ham-stuffed mushrooms. Two can certainly be a full meal. All recipies I found said to put inner zukes aside for separate recipe. Not needed at all.

    List of Ingredients

    3 small zucchini
    Olive oil
    1/4 cup dried minced onion
    1 clove garlic, minced
    1/2 cup finely chopped ham (4 oz)
    1/2 cup fine dry bread crumbs
    2 T grated Parmesan cheese
    1 egg
    1 T chopped fresh parsley
    1 T Marsala
    1/2 t salt
    1 t basil
    Freshly ground black pepper
    # provolone, shredded


    Steam the whole zucchini for approximately 8 minutes, or until tender. Let cool. Remove ends and cut zucchini in half. Using a melon baller, scoop out center of the zucchini boats. Chop zucchini centers into small pieces.
    Preheat oven to 350 degrees F.
    In a small bowl, beat the eggs. Stir in the breadcrumbs, cheese, Marsala, chopped succhini and ham. Mix well. Season with salt and pepper.
    Fill zucchini boats with mixture. Coat lasagna pan with olive oil. Place zucchini boats in. Drizzle with extra virgin olive oil. Grind fresh pepper over top. Spread Provolone on top Bake for 20 minutes.
